Meet Fernando
More than 25 years in kitchens, restaurants, bakeries and around family tables—now brought to private dining in Huntsville.
Where it began
Fernando grew up among his family’s olive groves in the Sierra de Jaén, Spain. While his brothers and cousins played outside, he was often in the kitchen with his grandmother Celia—watching, tasting and learning that food was a way of bringing people close.
Those early memories still shape the way he cooks today: generous food, honest ingredients and time made for the people around the table.

Built in the kitchen
Fernando began working in his uncle’s restaurant in Madrid, learning the discipline of traditional Basque and northern Spanish cooking.
His path has included opening his own restaurant in Madrid and dedicating years to artisan bread and pastry.
From 2022 to 2025, Fernando was recognized among Spain’s 50 leading artisan bakers, including a fourth-place ranking in Madrid.
The way Fernando cooks
At Sobremesa, the menu begins with the people who will share it. Fernando brings together Spanish tradition, careful technique and relaxed hospitality to create food that belongs naturally in the home and at the center of the conversation.
“I want guests to leave knowing how to make the dish—but remembering how the evening felt.”
Food should invite people closer and make everyone feel at home.
Seasonality, balance and clarity lead every menu.
The meal creates the moment; the sobremesa is what remains.

The family behind Sobremesa
For Fernando and Haley, Sobremesa is deeply personal: a place shaped by family, hospitality and the belief that sharing food can make people feel at home.
Today, Fernando brings the food he grew up around—from tapas and rice to bread and pastry—to private tables throughout Huntsville and North Alabama.
